Grate the cucumber, blend with salad and dill, strain, add salt and sugar

Cordial

• 2200g Sugar
• 2200g Water
• 36 Limes
• 142g citric acid

Zest and squeeze limes, combine all, infuse 1 day, blend and strain

Grapefruit Cordial

• 240g Sugar
• 240g Water
• 8 Grapefruites
• 10g citric acid

Zest and squeeze Grapefruites, combine all, infuse 1 day, blend and strain

Admin Mix

• 1000ml Lime Cordial
• 1000ml Grapefruit Cordial
• 1000ml Grade A Maple Syrup
• 10ml Vanilla Extract
• 10ml Almond Extract
• 50ml Angostura Bitters
• 50ml Pernod Absynth
